Remember the Maine Cocktail

I was surprised to see an 18 year old Single Malt used here, especially when paired with Cherry Heering and Absinthe, two flavors that I've found easily dominate the balance of a cocktail. Why would an 18 year old be preferred over a younger whisky? Or, maybe better put, what am I missing about Cherry Heering and Abinsthe that really allow a whisky to be showcased (and thus making good partners for an aged, high quality whisky)?
