Do you have a particular recipe and/or sugar cane syrup for the Ti-Ponche that works better than others? I’ve been playing around with the cocktail and can’t seem to find the magical balance between the sugar cane syurp, rum, and lime.

Sorry for the slightly dark lighting here. Things were so hectic at Tales of the Cocktail that it took us a while to find a relatively quiet place to set up for the interview, and unfortunately the lighting there didn’t want to cooperate.
Wayne is a fabulous guy, with great research and insights into the history of rum. We barely get a chance to scratch the surface here!
