Tiki drinks, in particular blended drinks, are coming back in a big way. The Piña Colada is one of the best of the bunch. In this episode, Kathy blends one in her Vitamix blender and makes it a bit luxurious with an aged rum float.

How to Make a Luxury PiƱa Colada

1/4 cup chopped fresh pineapple

1 1/2 oz Mount Gay Silver Rum

1 oz fresh lime juice

1 oz Cocoa Lopez cream of coconut (2 Tbsp.)

1 1/2 oz pineapple juice

Ice

1/2 oz float aged rum

Instructions

  • Place pineapple, rum, lime juice, Coco Lopez, and pineapple juice in a high-quality blender, such as the Vitamix BarBoss Advance®.
  • Fill a tall (12 oz) glass with ice. Then add it to the blender. Secure lid on blender. Blend on high till drink is icy smooth. Pour into a tall glass.
  • Drizzle with a float of aged rum. Garnish with fresh pineapple, lime, cherry and pineapple leaf.
  • Garnish with fresh pineapple spear, lime wedge, maraschino cherry, pineapple leaf
