Italian style cheeses are meant to be paired with Italian wines. A classic Gorgonzola and two very different Wisconsin-made, Italian inspired Asiagos, one covered with herbs and Italian olive oil the other with spices and tomatoes, pair perfectly with a Chianti from Tuscany.
