Gin with House-Made Bitter Lemon and Soda

Making your own house-made ingredients is a great way to up the quality of your cocktails. House-made syrups are a great place to start like in this bitter lemon syrup that is perfect with or without the use of a base spirit. For a savory twist, try shaking in a sprig of fresh tarragon with the gin and bitter lemon before adding the sparkling water. Another delicious twist is the addition of a 1/4 oz of green Chartreuse.

1 1/2 oz Martin Miller's Gin
1 oz Housemade Bitter Lemon (recipe follows)
2 oz chilled Perrier Natural Sparkling Mineral Water
House-made Bitter Lemon
Makes 2 1/2 cups
4 large lemons
1 1/2 cups sugar
2 cups water
Instructions
Cocktail
Measure the Martin Miller Gin, Bitter Lemon, into a mixing glass.
Fill glass three-quarters with ice. Shake vigorously.
Add the sparkling water and swirl in mixing tin.
Strain into a tall Collins glass filled with fresh ice.
Garnish with lemon wedgeand cherry on a pick.
House-made Bitter Lemon
Wash lemons and cut the ends off and slice each lemon in half lengthwise and each half into 4 slices.
Combine lemons, sugar and water in a blender cup. Process in the Vitamix Bar Boss Advance by pulsing until almost smooth, mixture should still have some texture.
Place mixture in a medium non-corrosive pan and bring to a boil over medium high heat. Let boil for 1 minute then remove from heat and let steep for 1 hour.
Strain through a fine strainer. Store refrigerated for up to 2 weeks.
